Ingredients

  • 300g beluga lentils

  • 2 beetroots (cooked, pre-packaged)

  • 100g feta cheese

  • 10 radishes

  • ½ red onion

  • Two handfuls mixed greens

  • Salad Dressing
  • 3 tbsp olive oil

  • 1 tbsp apple cider vinegar

  • 2 garlic clove crushed

  • ½ squeezed lemon juice

  • Salt

Method

  • Cooked pre-washed beluga lentils for 20-30 min until soft. You can also used drained and washed tinned lentils.
  • Chop the feta, the beetroots, the radishes and the onions.
  • Mixed all the ingredients together with leafy greens and the salad dressing.
