Beluga Lentils & Beetroot Salad

Serves: 2 people

Cooking time: 20 min (lentils)

Ingredients

300g beluga lentils

2 beetroots (cooked, pre-packaged)

100g feta cheese

10 radishes

½ red onion

Two handfuls mixed greens

 

Salad dressing

3 tbsp olive oil

1 tbsp apple cider vinegar

2 garlic clove crushed

½ squeezed lemon juice

Salt

Method

  1. Cooked pre-washed beluga lentils for 20-30 min until soft. You can also used drained and washed tinned lentils.
  2. Chop the feta, the beetroots, the radishes and the onions.
  3. Mixed all the ingredients together with leafy greens and the salad dressing.
