Black Beans & Dill Pesto Salad

Ingredients

For salad

  • 1 x 400ml can of black beans
  • ½ red onion
  • 10-12 cherry tomatoes
  • 1 small bunch fresh dill

For pesto

  • 50ml extra virgin olive oil
  • 1 handful of pine nuts
  • 2 handfuls spinach
  • 1 handful fresh dill
  • ½ squeezed lemon juice
  • 1 garlic clove
  • Salt

Method

  1. Drain and wash the black beans.
  2. Chop the onion, the tomatoes and the dill.
  3. For pesto: place all ingredients in a blender and blitz until smooth.
  4. Mix the beans with the vegetables, add pesto as a dressing and top up with fresh dill.
