Pasta with Cavolo Nero Pesto


1 bunch of cavolo nero

100ml olive oil

150g pine nuts

½ lemon

Pinch of salt


  1. Wash and roughly chop cavolo nero, removing stalks. You can roughly tear leaves off as well.
  2. Add chopped cavolo nero, pine nuts, olive oil, a pinch of salt and lemon juice in a kitchen processor and mix!
  3. Cook pasta of your choice and mix with pesto.  Top up with mozzarella or nutritional yeast.
