1 bunch of cavolo nero
100ml olive oil
150g pine nuts
Pinch of salt
- Wash and roughly chop cavolo nero, removing stalks. You can roughly tear leaves off as well.
- Add chopped cavolo nero, pine nuts, olive oil, a pinch of salt and lemon juice in a kitchen processor and mix!
- Cook pasta of your choice and mix with pesto. Top up with mozzarella or nutritional yeast.
