Marinated Red Onions

Ingredients

  • 1 large red onion

  • 2tbsp red wine vinegar

  • 1tsp dry oregano

  • 100-125ml extra virgin olive oil

Method

  • Slice the onion in rings or half-rings.
  • Place in a bowl and pour the olive oil to completely cover the onions.
  • Add the vinegar and the oregano, mix well and leave on the kitchen top for up to two days. You can use the onions after 12h of marinating.
  • Use the remaining olive oil as a salad dressing.
