Marinated Red Onions

1 large red onion
2tbsp red wine vinegar
1tsp dry oregano
100-125ml extra virgin olive oil
Method
- Slice the onion in rings or half-rings.
- Place in a bowl and pour the olive oil to completely cover the onions.
- Add the vinegar and the oregano, mix well and leave on the kitchen top for up to two days. You can use the onions after 12h of marinating.
- Use the remaining olive oil as a salad dressing.
