Ingredients

  • 1 x 400ml can of black beans
  • ½ red onion
  • 10-12 cherry tomatoes
  • 1 small bunch fresh dill

Method

    Drain and wash the black beans.

    Chop the onion, the tomatoes and the dill.

    For pesto: place all ingredients in a blender and blitz until smooth.

    Mix the beans with the vegetables, add pesto as a dressing and top up with fresh dill.
