Black Beans & Dill Pesto Salad

Ingredients

  • For Salad
  • 1 x 400ml can of black beans

  • ½ red onion

  • 10-12 cherry tomatoes

  • 1 small bunch of fresh dill

  • For Pesto
  • 50ml extra virgin olive oil

  • 1 handful of pine nuts

  • 2 handfuls spinach

  • 1 handful fresh dill

  • ½ squeezed lemon juice

  • 1 garlic clove

  • Salt

Method

  • Drain and wash the black beans.
  • Chop the onion, the tomatoes and the dill.
  • For pesto: place all ingredients in a blender and blitz until smooth.
  • Mix the beans with the vegetables, add pesto as a dressing and top up with fresh dill.
