Ingredients
- 200g mixed mushrooms
- 2 handfuls of spinach
- 2 garlic cloves
- 2 tbsp olive oil
- 2 slices of sourdough bread
- Salt and pepper
- Fresh herbs (optional)
Method

Heat olive oil in a pan over medium heat. Add minced garlic and cook until fragrant.

Add sliced mushrooms and cook until browned.

Add spinach and cook until wilted.

Season with salt and pepper to taste.

Toast bread slices until golden brown.

Top the toast with the mushroom and spinach mixture.
