Ingredients

  • 200g red lentils
  • 1 onion
  • 3 garlic cloves
  • 1 tbsp fresh ginger
  • 1 tsp turmeric
  • 1 tsp cumin
  • 400ml coconut milk
  • Fresh coriander

Method

    Rinse lentils thoroughly.

    Sauté onion, garlic and ginger until fragrant.

    Add spices and cook for 1 minute.

    Add lentils, coconut milk and 400ml water.

    Simmer for 25-30 minutes until lentils are soft.

    Garnish with fresh coriander and serve.
