Ingredients

  • 4 eggs
  • 1 large handful spinach
  • 6 sun dried tomatoes
  • 2 tbsp olive oil (for frying)
  • Toasted bread
  • 1 avocado (optional)
  • 1 tsp dried parsley
  • Salt
  • Pepper

Method

    Heat the olive oil in a pan and add the spinach. Cook for a couple of minutes until the spinach has wilted.

    In a separate bowl, whisk the eggs with salt, pepper and dried parsley. Add the eggs to the pan with spinach and cook for a few minutes, stirring every now and then, until the eggs are cooked.

    Toast the bread, slice the avocado and the dried tomatoes.

    Combine the scrambled eggs with sun dried tomatoes and place on the toast.
