Spinach Scrambled Eggs on Toast

Ingredients

4 eggs

1 large handful spinach

6 sun dried tomatoes

2tbsp olive oil (for frying)

Toasted bread

1 avocado (optional)

1tsp dried parsley

Salt

Pepper

Method

  1. Whisk 4 eggs with the dried parsley, the salt and the pepper.
  2. Pour the eggs in a hot frying pan with some olive oil, add the spinach and cook for 2-3 min over a medium heat, stirring continuously.
  3. Toast the bread, slice the avocado and the dried tomatoes.
  4. Combine the scrambled eggs with sun dried tomatoes and place on the toast.
